EPH 31700 - Food Safety and Security (4) This course introduces current food safety practices and programs to manage biological, chemical, and physical risk to assure safety of food. Topics include food safety issues, regulations, techniques, cultural considerations, and technology related to food protection in Alaska, nationally, and globally. Food security, the measure of the availability of food and individuals’ ability to access it, is also covered.
